Chicken Wild Rice Soup

A warm and comforting soup featuring tender chicken, nutty wild rice, and fresh vegetables, perfect for chilly days.

Ingredients

  • 2 cups cooked chicken (or tofu/chickpeas for vegetarian)
  • 1 cup wild rice
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream (or coconut milk)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping carrots and celery and shredding the chicken.
  2. Cook the wild rice by rinsing it, then simmering in 2 cups of water for 40-50 minutes.
  3. Sauté carrots and celery in olive oil for 5-7 minutes until tender.
  4. Add the chicken broth to the pot and bring to a simmer.
  5. Incorporate the cooked chicken and wild rice into the mixture, simmering for another 10 minutes.
  6. Cream it up by adding heavy cream and simmering for an additional 5 minutes.
  7. Final touches can include fresh herbs before serving.
