Peach Cobbler Cheesecake Bars

A delicious combination of creamy cheesecake and sweet peaches in a buttery graham cracker crust, perfect for summer!

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, sliced
  • 1 tbsp cornstarch
  • 1/4 cup brown sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs and melted butter in a medium-sized bowl.
  3. Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
  4. Bake the crust for about 8–10 minutes or until lightly golden. Let it cool.
  5. Beat the softened cream cheese in a large mixing bowl until smooth.
  6. Add the sugar, eggs, and vanilla extract, mixing until silky and homogeneous.
  7. Combine the sliced peaches with cornstarch, brown sugar, and cinnamon in a different bowl.
  8. Pour the cheesecake filling over the cooled crust, then spoon the peach mixture on top.
  9. Bake for 30–35 minutes, until the center is set but slightly jiggles.
  10. Cool at room temperature and then refrigerate for at least 4 hours.
  11. Slice into bars and serve.

Notes

Serve with vanilla ice cream or drizzled caramel. Chill overnight for the best flavor.
