Apple Puff Pastry Turnovers

Delightful apple turnovers wrapped in flaky puff pastry, perfect for any occasion.

  • 1 pound (2 sheets) puff pastry (thawed if frozen)
  • 2 large (or 4 small) Granny Smith apples (peeled, cored, and diced)
  • 1 tablespoon unsalted butter
  • 1/8 cup brown sugar
  • 1/8 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1 pinch salt
  • 1 large egg
  • 1 tablespoon milk
  • 2/3 cup powdered sugar
  • 1 tablespoon milk (for glaze)

Instructions

  1. Prepare the Apples: Begin by peeling, coring, and dicing your Granny Smith apples into small, even pieces. In a medium saucepan over medium heat, melt the unsalted butter. Add the diced apples, brown sugar, granulated sugar, cornstarch, cinnamon, and a pinch of salt. Stir gently and let it cook for about 5–7 minutes until the apples are tender. Remove from heat and set aside to cool.
  2. Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheets on a lightly floured surface until about 1/8 inch thick. Cut each sheet into 4 squares—yielding 8 turnovers.
  3. Spoon about 2 tablespoons of the apple filling onto the center of each pastry square. Be careful not to overfill.
  4. Fold the pastry over the filling to create a triangle. Press down the edges firmly and use a fork to crimp the edges.
  5. Whisk together the egg and milk in a small bowl. Brush this egg wash over the tops of the turnovers. Place on a parchment-lined baking sheet, leaving space for puffing up. Bake for 20-25 minutes until golden brown.
  6. Whisk together the powdered sugar and remaining milk in a small bowl for the glaze, achieving a syrupy consistency.
  7. Drizzle the glaze over cooled turnovers before serving.

Notes

Serve warm with whipped cream or vanilla ice cream for an extra treat.
