  • 2 cups cooked and shredded Chicken
  • 1 cup uncooked Wild Rice
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 cup heavy Cream (or substitute)
  • 6 cups Chicken Broth
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 teaspoon dried Thyme (or fresh)
  • 2 Bay Leaves
  • Salt and Pepper, to taste

Instructions

  1. Prepare your ingredients by gathering and prepping them before you start cooking.
  2. Sauté the aromatics, heating olive oil in a large pot and cooking onion and garlic until fragrant.
  3. Add the diced carrots and celery, cooking until softened.
  4. Pour in the chicken broth and add bay leaves and thyme, bringing it to a simmer.
  5. Add the uncooked wild rice, cover, and let it simmer until tender.
  6. Introduce the shredded chicken and cream, simmering for a few more minutes.
  7. Remove the bay leaves and add fresh thyme if desired before serving.
