Creamy Tomato Garlic Pasta

A simple yet elegant creamy pasta dish bursting with garlic and tomato flavors, perfect for a comforting weeknight meal.

  • 8 oz Pasta (fettuccine, penne, or spaghetti)
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 can (14 oz) Diced Tomatoes
  • 1 cup Heavy Cream
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper to taste
  • Fresh Basil for Garnish
  • Parmesan Cheese for Serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente. Don’t forget to reserve a cup of starchy pasta water before draining!
  2. Sauté the Garlic: While your pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1–2 minutes, or until fragrant and golden.
  3. Add the Tomatoes: Pour in the diced tomatoes (with their juices) and stir. Allow this mixture to simmer for about 5–7 minutes.
  4. Mix in the Cream: Slowly add the heavy cream to your skillet, stirring until well combined. Bring it to a gentle simmer.
  5. Season It Up: Add the Italian seasoning, salt, and pepper. Adjust the seasoning as necessary.
  6. Combine Pasta and Sauce: Once your pasta is cooked and drained, add it directly to the skillet with the creamy tomato sauce. Toss it all together!
  7. Finish and Serve: Plate up your pasta, garnish with fresh basil and a generous sprinkle of Parmesan cheese.

Notes

For a heartier meal, consider adding grilled chicken or sautéed mushrooms. You can also swap the heavy cream for coconut cream for a dairy-free option.
