A delightful High-Protein Chicken Ranch Quesadilla that is not only packed with protein but also bursting with flavor.

Ingredients

  • 1 low-carb tortilla
  • 1/4 cup Greek yogurt
  • 2 wedges of Laughing Cow cheese
  • 1 cup cooked, shredded chicken
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil for frying

Instructions

  1. Prep your chicken. Season and cook it until done, then shred.
  2. Mix the shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning in a bowl until combined.
  3. Heat a skillet with cooking spray or oil over medium heat.
  4. Assemble the quesadilla by spreading the chicken filling over one half of the tortilla and folding it.
  5. Cook for 3-4 minutes on each side until golden brown and the cheese melts.
  6. Slice and serve with salsa or guacamole.
