  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup diced apples

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Mix the almond flour, erythritol, baking powder, cinnamon, and salt in a large bowl.
  4. Combine the applesauce, melted coconut oil, and vanilla extract in a separate bowl.
  5. Pour the wet mixture into the dry ingredients and mix until thoroughly combined.
  6. Fold in the diced apples gently.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet.
  8. Bake for about 12-15 minutes, until golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
