Ingredients

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup erythritol (or preferred low-carb sweetener)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper or grease it with coconut oil or butter.
  3. Combine almond flour, cocoa powder, erythritol, salt, and baking powder in a large mixing bowl.
  4. Add the eggs, melted butter, and vanilla extract to the dry mixture and mix until just combined.
  5. Transfer the batter to the prepared baking pan and spread it evenly.
  6. Bake for about 25-30 minutes until the top looks set.
  7. Cool in the pan for 10-15 minutes before slicing into squares.

Notes

For added richness, fold in sugar-free chocolate chips before baking. These brownies can be stored in an airtight container for up to 5 days.
