Keto Cinnamon Rolls

Deliciously low-carb cinnamon rolls with a delightful blend of almond flour and creamy butter, topped with a rich cream cheese icing.

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/4 cup cream cheese
  • 1 tablespoon heavy cream
  • 1/4 cup powdered erythritol (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine almond flour, coconut flour, erythritol, baking powder, and salt in a mixing bowl.
  3. Whisk together melted butter, eggs, and vanilla extract in a separate bowl. Fold this mixture into the dry ingredients.
  4. Roll out the dough between two sheets of parchment paper into a rectangle, about 1/4 inch thick.
  5. Mix cinnamon and erythritol in a small bowl and prepare the cinnamon filling.
  6. Spread softened cream cheese over the dough and sprinkle the cinnamon sugar mixture on top.
  7. Roll up the dough tightly and slice into rolls.
  8. Arrange rolls in a greased 8×8-inch baking dish, cut side up.
  9. Bake for 20-25 minutes, or until golden brown.
  10. Whisk powdered erythritol, cream cheese, and heavy cream for the icing.
  11. Drizzle icing over warm rolls before serving.
