Lasagna Soup

A delightful twist on classic lasagna in the form of a cozy, heartwarming soup, perfect for family gatherings and cold nights.

  • 1 lb Ground Beef
  • 8 oz Lasagna Noodles (broken into smaller pieces)
  • 28 oz Canned Crushed Tomatoes
  • 1 cup Ricotta Cheese
  • 2 cups Mozzarella Cheese (shredded)
  • 4 cups Beef or Vegetable Broth
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • Olive Oil
  • Salt and Pepper to taste
  • Fresh Basil or Spinach (for garnish)

Instructions

  1. Brown the meat: Heat a large pot over medium heat. Add olive oil and ground beef, breaking it up and cooking until browned (about 5-7 minutes).
  2. Add aromatics: Toss in chopped onions and minced garlic. Cook until onions are translucent (about 3-4 minutes).
  3. Stir in the tomatoes: Pour in the canned crushed tomatoes and stir well to combine.
  4. Add broth and noodles: Pour in the broth, bring to a boil, and then add broken lasagna noodles. Simmer for about 10-12 minutes.
  5. Incorporate ricotta: Stir in ricotta cheese and fresh basil or spinach just before serving.
  6. Melt the mozzarella: Stir in shredded mozzarella until melted and stretchy right before serving.

Notes

This soup can be frozen for up to three months. Check noodles for doneness before serving to avoid mushiness.
