Lemon Brownies

Delicious lemon brownies that blend rich brownie texture with zesty lemon flavor, perfect for any gathering.

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice
  • Zest of 2 lemons
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)
  • Zest of 1 lemon (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing it or lining with parchment paper.
  3. Mix the melted unsalted butter and granulated sugar until shiny and smooth. Add in the eggs one at a time, stirring well after each.
  4. Add the flour, baking powder, and salt in a separate bowl, then fold into the butter mixture without overmixing.
  5. Incorporate the lemon juice and zest until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for about 25–30 minutes until edges are set and the center is slightly gooey.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Whisk together powdered sugar, lemon juice, and zest for the glaze, then drizzle over the cooled brownies.
  10. Slice into squares and serve.

Notes

Serve warm with ice cream, or enjoy chilled. Garnish with fresh mint or lemon slices for a pop of color.
