Ultimate Mexican Chopped Salad

A refreshing and colorful Mexican Chopped Salad filled with fresh ingredients and vibrant flavors.

Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or grilled
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the lettuce and pat it dry. Cut it into bite-sized pieces.
  2. Prep the veggies: halve the tomatoes, dice the onion and bell pepper, and chop the cilantro.
  3. Drain and rinse the beans and corn to reduce sodium.
  4. Dice the avocado carefully; sprinkle with lime juice to prevent browning.
  5. Combine all ingredients in a large bowl.
  6. Dress it with lime juice, olive oil, salt, and pepper.
  7. Toss gently to mix all the ingredients together.

Notes

Serve with lime wedges and garnish with extra cilantro. Add proteins like grilled chicken or shrimp for a heartier meal.
