Mummy Meatloaf

A fun and delightful meatloaf recipe that’s perfect for Halloween celebrations, shaped like a mummy and served with creamy mashed potatoes.

  • 1 pound ground beef (85/15 blend)
  • 1 cup finely chopped onion
  • 1/2 cup dried breadcrumbs
  • 1 beaten egg
  • 1/4 cup ketchup
  • 1 tablespoon mustard (preferably Dijon)
  • Black olives (for eyes)
  • Mashed potatoes (for ‘bandages’)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 pound of ground beef, 1 cup of finely chopped onion, 1/2 cup of breadcrumbs, and 1 beaten egg in a bowl. Season with salt and pepper.
  3. Stir in 1/4 cup of ketchup and 1 tablespoon of mustard.
  4. Shape the mixture into a loaf on a baking sheet lined with parchment paper.
  5. Prepare the mashed potatoes and pipe them around the meatloaf to create ‘bandages.’
  6. Place two black olives for eyes.
  7. Drizzle more ketchup on top and bake for 45-50 minutes.
  8. Let it rest for about 10 minutes before serving.

Notes

You can prepare the meatloaf a day in advance and store it in the refrigerator until you’re ready to bake.
