Tarte aux Fraises

A classic French strawberry tart, perfect for summer gatherings, combining a crisp crust with vanilla pastry cream and fresh strawberries.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg yolk
  • 1 cup vanilla pastry cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup apricot jam (optional, for glazing)

Instructions

  1. Make the Tart Crust: In a mixing bowl, combine the flour and powdered sugar. Mix well, then add the softened butter and rub it in until it resembles coarse crumbs.
  2. Add the Egg Yolk: Add the egg yolk and stir until the mixture clumps together. Press into a ball, adding ice water if too dry.
  3. Chill the Dough: Wrap in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C).
  5. Roll Out the Dough: Lightly flour your surface and roll the dough to about 1/8 inch thick, then transfer it to the tart pan.
  6. Blind Bake the Crust: Prick holes in the crust, line with parchment and weights, and bake for 15 minutes. Remove weights and bake for an additional 10-12 minutes until golden.
  7. Prepare the Vanilla Pastry Cream: Whisk milk, sugar, and vanilla over medium heat until steaming. Temper egg yolks with cornstarch, then cook until thickened.
  8. Assemble the Tart: Spread pastry cream over the cooled crust and layer the strawberries on top.
  9. Glaze with Apricot Jam: Warm the jam and brush it over the strawberries.
  10. Chill Before Serving: Refrigerate for about an hour before serving.

Notes

Serve with a dusting of powdered sugar and a dollop of whipped cream.
