Chicken Dumpling Soup

  • 1 rotisserie chicken, shredded
  • 1 can refrigerated biscuit dough
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Prepare the broth: In a large pot over medium heat, pour in your chicken broth.
  2. Sauté the aromatics: Add the chopped onions, diced carrots, and celery to the broth.
  3. Add the shredded chicken: Toss in the shredded rotisserie chicken and let it mingle.
  4. Stir in the cream and seasoning: Pour in the heavy cream, mixing well.
  5. Prepare the dumplings: Cut the biscuit dough into quarters.
  6. Dumpling time! Gently drop the cut biscuit pieces into the soup.

Notes
