Ooey Gooey Banana Bars

These delightful banana bars are sweet, comforting, and the perfect balance of chewy and soft. Easy to make and irresistibly delicious!

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup peanut butter (for drizzling on top)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish by greasing it or lining it with parchment paper.
  3. Mash the bananas in a large mixing bowl until mostly smooth.
  4. Mix in the melted butter, followed by the brown sugar, egg, and vanilla extract.
  5. Combine the flour, baking soda, and salt in a separate bowl and then fold into the wet ingredients.
  6. Pour the batter into the prepared baking dish and drizzle with peanut butter.
  7. Bake for 25-30 minutes until the edges are golden.
  8. Cool for 10 minutes before cutting into squares.

Notes

For a vegan option, substitute the egg with a flax egg and use plant-based butter. Enjoy warm with ice cream or powdered sugar!
