Pumpkin Crumb Cake

  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

  • ½ cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • ½ cup rolled oats
  • ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9 inch baking pan by greasing it or lining it with parchment paper.
  3. Mix the dry ingredients: whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine the wet ingredients in another bowl: mix together melted butter, pumpkin puree, eggs, and vanilla extract.
  5. Mix the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  6. Prepare the crumb topping by mixing brown sugar, rolled oats, and chopped nuts in a smaller bowl, then drizzle in some melted butter.
  7. Layer the cake batter into the prepared pan, spreading the crumb topping evenly over the batter.
  8. Bake for 30-35 minutes or until a toothpick comes out clean with just a few crumbs.
  9. Cool in the pan for about 15 minutes before transferring to a wire rack, then slice and serve.

Notes

Dust slices with powdered sugar, and serve with whipped cream or ice cream for extra indulgence.
