Creamy Roasted Celery and Potato Soup

A warm, creamy soup blending roasted potatoes and celery for a comforting dish perfect for chilly days.

  • 4 medium potatoes, diced
  • 4 celery stalks, chopped
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: cream or milk for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep your vegetables: Peel and dice the potatoes, chop celery and onion.
  3. Toss with olive oil: Place vegetables on a baking sheet, drizzle olive oil, and season with salt and pepper.
  4. Roast those veggies for about 25 to 30 minutes, stirring halfway through.
  5. Add vegetable broth: Transfer roasted veggies to a pot and pour in vegetable broth.
  6. Bring to a simmer on medium-high heat.
  7. Blend until smooth: Use an immersion blender to purée the mixture until creamy.
  8. Adjust seasoning and creaminess to your preference, reheating if necessary.
