Instructions

  1. Prep the chicken by shredding it if using a rotisserie chicken.
  2. Sauté the diced onion in olive oil until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Mix the shredded chicken, black beans, corn, enchilada sauce, and broth into the pot.
