Homemade Corn Chowder

A heartwarming recipe for creamy corn chowder that encapsulates cozy gatherings and delightful cooking.

  • 4 ears Fresh Corn (or 2 cups Frozen Corn)
  • 2 medium Potatoes, diced
  • 4 slices Bacon, chopped
  • 1 cup Heavy Cream (or alternative)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • Salt & Black Pepper, to taste
  • Fresh Herbs (Chives or Parsley), for garnish

Instructions

  1. Prep your ingredients by shucking the corn and chopping the potatoes, onion, garlic, and bacon.
  2. Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes.
  3. Sauté the onion in the bacon fat until translucent, then add garlic and cook for another minute.
  4. Add the diced potatoes and pour in the broth to cover them; season and simmer until fork-tender, about 10-15 minutes.
  5. Incorporate the corn and allow to simmer for about 5 minutes.
  6. Blend half of the chowder using an immersion blender for creaminess.
  7. Finish with heavy cream and adjust seasoning as needed.
  8. Reintroduce the crispy bacon, stir well, and serve.

Notes

For variations, consider adding jalapeños for spice, coconut milk for a vegan version, or cheddar cheese for a cheesy twist.
