Creamy Carrot Ginger Soup

A vibrant, velvety soup made with carrots and ginger that warms the soul and tickles the taste buds.

Ingredients

  • 4 cups Carrots, roughly chopped
  • 2 inches Fresh Ginger, peeled and grated
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 cup Cream (or coconut milk for a dairy-free option)
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Sauté the aromatics in a large pot with olive oil until the onions are translucent.
  2. Add the minced garlic and grated ginger, stirring for about a minute until fragrant.
  3. Incorporate the chopped carrots and sauté for another 5 minutes.
  4. Pour in the vegetable broth, bring to a gentle boil, then reduce to simmer for 20 minutes until carrots are fork-tender.
  5. Blend the soup until smooth using an immersion blender.
  6. Add the cream, stirring until well combined and adjust seasoning as needed.
  7. Serve warm, garnished as desired.
