Creamy Mushroom Soup

A comforting and versatile creamy mushroom soup that warms the soul.

Ingredients

  • 8 cups mushrooms (cremini, shiitake, or button), sliced
  • 1 onion, chopped finely
  • 4 cups vegetable or chicken stock
  • 1 cup heavy cream (or alternative)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, stripped from stems
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley or thyme, for garnish

Instructions

  1. Prepare your ingredients: Clean and slice mushrooms. Chop onion and strip thyme leaves.
  2. Sauté the onions: Heat olive oil, add onion, and salt. Cook for about 5-7 minutes until softened.
  3. Add the mushrooms: Increase heat and sauté mushrooms until golden brown for about 10 minutes.
  4. Incorporate the thyme: Stir in thyme and cook until aromatic.
  5. Pour in the stock: Add stock, bring to boil, then simmer for 15 minutes.
  6. Blend the soup: Use an immersion blender or transfer to a blender until smooth.
  7. Stir in the cream: Return soup to pot, add cream and heat through while seasoning as needed.
  8. Garnish: Serve with fresh parsley or thyme and enjoy with crusty bread.

Notes

This soup can be made ahead of time and stored in the fridge for up to 3 days. Add cream just before reheating.
