Broccoli Cheddar Soup

A rich and creamy Broccoli Cheddar Soup that warms the heart and soul, perfect for chilly evenings or rainy afternoons.

  • 2 cups fresh broccoli florets
  • 1 cup diced carrots
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Prep the vegetables: Wash and chop broccoli, peel and dice carrots, chop onion, and mince garlic.
  2. Sauté the aromatics by heating olive oil, then add onion and cook until translucent, add garlic and cook until fragrant.
  3. Add carrots and broccoli, stir and sauté for about 5 minutes.
  4. Pour in vegetable broth, cover the vegetables, and bring to a simmer for about 15 minutes until broccoli is tender.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Add heavy cream and gradually add cheddar cheese, stirring until melted.
  7. Season with salt and pepper to taste.
  8. Serve in bowls and garnish with chopped chives or additional cheese.

Notes

For a vegan version, substitute the heavy cream with coconut milk and use plant-based cheese.
