  • 1 lb boneless, skinless chicken breasts
  • 4 cups marinara sauce
  • 1 cup freshly grated Parmesan cheese
  • 1 cup small pasta (e.g., ditalini, orzo, or broken spaghetti)
  • 4 cups chicken broth
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil
  • Fresh basil for garnish
  • 23 cloves minced garlic
  • 1 medium diced onion

Instructions

  1. Prepare your chicken by heating olive oil in a large pot over medium heat. Season with salt and pepper. Sauté for 5-6 minutes on each side until cooked through. Remove and shred.
  2. Sauté the onion and garlic in the same pot until fragrant and translucent.
  3. Add the marinara sauce and chicken broth, bring to a simmer.
  4. Incorporate the pasta and cook according to package instructions until al dente.
  5. Shred the chicken into bite-sized pieces and return to the pot.
  6. Bring the soup to taste by adding Parmesan cheese and adjusting seasoning.
  7. Finishing with fresh basil, ladle into bowls and serve with extra Parmesan on top.
