Creamy Sun-Dried Tomato Chicken Orzo

A creamy, comforting orzo dish packed with flavors of sun-dried tomatoes, tender chicken, and fresh spinach, perfect for busy weeknights.

  • 1 pound Chicken breast tenderloins
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon Salt (Divided)
  • 1/4 teaspoon Black pepper
  • 5 cloves Garlic (Minced)
  • 1 cup Sun-dried tomatoes (Chopped)
  • 1 cup Orzo (Uncooked)
  • 2 cups Chicken stock
  • 4 ounces Fresh spinach
  • 1/2 cup Heavy cream
  • 1 tablespoon Dried basil
  • 1/4 teaspoon Red pepper flakes
  • 2 tablespoons Grated Parmesan

Instructions

  1. Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season your chicken tenderloins with paprika, Italian seasoning, salt, and black pepper. Add them to the pan in a single layer and sear for 4-5 minutes until golden. Then flip and cook the other side.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Then add the chopped sun-dried tomatoes and stir for about another 2 minutes.
  3. Pour in the uncooked orzo, stirring it into the sun-dried tomatoes and garlic. Allow it to toast for a minute. Add the chicken stock and bring to a gentle simmer. Cover and cook according to package instructions (usually 8-10 minutes) until the orzo is tender.
  4. Add the heavy cream to the skillet, stirring gently to combine. Toss in the fresh spinach, letting it wilt down.
  5. Slice the cooked chicken into bite-sized pieces and return it to the skillet, ensuring it’s well mixed with the sauce. Stir in dried basil and red pepper flakes.
  6. Finish off by tasting and adjusting seasoning as needed. Top with grated Parmesan cheese and stir to melt into the dish.

Notes

This dish can be prepared in advance and reheats well. Adjust seasoning to taste before serving.
