The Ultimate Tomato Basil Soup

A comforting classic Tomato Basil Soup that feels like a hug in a bowl, bursting with fresh flavors.

  • 4 cups Fresh Tomatoes, quartered
  • 1 cup Fresh Basil, chopped
  • 3 cloves Garlic, minced
  • 1 cup Cream (or coconut milk for a dairy-free option)
  • 4 cups Chicken or Vegetable Stock
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your ingredients: Wash and quarter the fresh tomatoes. Mince the garlic and chop the basil, reserving a few leaves for garnish.
  2. Sauté the aromatics: In a pot, heat olive oil and add garlic. Cook for 30 seconds until fragrant.
  3. Add the tomatoes to the pot and stir. Cook for 5-7 minutes until they break apart.
  4. Pour in the stock and season with salt and pepper. Simmer for 15-20 minutes.
  5. Blend the soup using an immersion blender or in batches until smooth.
  6. Stir in the cream and chopped basil. Adjust seasoning and simmer for another 5 minutes.
  7. Serve hot in bowls, garnished with fresh basil and a drizzle of olive oil.

Notes

For a spicy kick, add red pepper flakes or harissa. It freezes beautifully for up to 3 months.
