Marry Me Melting Cabbage in Creamy Tuscan Love Sauce

  • 1 head Green Cabbage (Cut into 8 wedges)
  • 2 tablespoons Olive Oil (For searing)
  • 1 tablespoon Butter
  • 1 medium Red Onion (Sliced)
  • 4 cloves Garlic (Minced)
  • 1 cup Chicken Broth
  • 4 ounces Cream Cheese
  • 1 cup Heavy Cream
  • 1/2 cup Sun-Dried Tomatoes (Chopped)
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 teaspoon Salt (Adjust to taste)
  • 1 teaspoon Pepper (Adjust to taste)
  • 1/2 teaspoon Red Pepper Flakes (Optional)
  • 1/2 cup Parmesan Cheese (Grated)
  • 2 tablespoons Fresh Parsley (Chopped)

Instructions

  1. Prep the Cabbage: Start by removing any tough outer leaves from your head of cabbage. Cut the cabbage into 8 wedges (as even as possible).
  2. Sear the Cabbage: In a large skillet, heat the olive oil over medium-high heat. When shimmering, add the cabbage wedges, cut side down.
  3. Cook for about 4–5 minutes until they’re golden brown. Gently flip the wedges to cook the other sides for another 3 minutes.
  4. Add the Butter and Aromatics: Reduce the heat to medium-low, add butter, red onion and minced garlic. Sauté for about 3–4 minutes until soft.
  5. Create the Sauce: Slowly pour in the broth, scraping the pan for flavor. Add sun-dried tomatoes, oregano, thyme, rosemary, salt and pepper, stirring together gently.
  6. Mix in the Cream Cheese & Heavy Cream: Add cream cheese and heavy cream, stirring until smooth. If too thick, add a splash of broth.
  7. Nestle the Cabbage: Carefully place the cabbage wedges back into the pan and spoon sauce over them.
  8. Simmer and Finish: Cover and cook for 25–30 minutes on low heat until tender.
  9. Add the Parmesan: Remove the lid, sprinkle cheese over the cabbage, cover for 5 minutes for the cheese to melt.
  10. Garnish and Serve: Sprinkle with parsley and serve hot.

Notes

Serve with toasted crusty bread to soak up the sauce, or alongside grilled chicken or fish.
