French Onion Soup

A comforting and rich French onion soup, perfect for cold days, featuring sweet caramelized onions, beef broth, and topped with melted cheese.

  • 4 large yellow onions
  • 6 cups beef broth (or vegetable broth for a vegetarian version)
  • 1 whole French baguette
  • 1 ½ cups shredded gruyère cheese (or Swiss cheese, or a mix)
  • 2 tablespoons butter (or olive oil for a vegan option)
  • A few sprigs of fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. Slice the onions thinly, aiming for about 1/8-inch slices.
  2. Melt the butter in a large pot over medium heat.
  3. Add the onions and a pinch of salt, stirring to coat with butter.
  4. Caramelize for 30–40 minutes, stirring occasionally until deep golden brown.
  5. Add thyme when onions are browned.
  6. Deglaze the pot with 1 cup of beef broth, scraping up browned bits.
  7. Simmer the remaining broth in the soup for 20 minutes, seasoning with salt and pepper.
  8. Preheat your oven to 400°F (200°C).
  9. Slice the baguette and toast in the oven for about 10 minutes.
  10. Add cheese on top of baguette slices and toast until melted.
  11. Serve by ladling the soup into bowls, adding a baguette slice, and topping with more cheese, then broil for 2–3 minutes until bubbly.

Notes

For variations, consider adding sautéed mushrooms or a splash of sherry for an extra flavor kick. This soup can be made ahead and stored in the fridge for up to 3 days.
