Garlic Parmesan Chicken and Potatoes

A comforting dish featuring crispy, cheesy garlic parmesan chicken served with tender baby potatoes.

  • 1 ½ lbs boneless (skinless) chicken breasts (about 34 pieces)
  • 1 ½ lbs baby potatoes (halved)
  • 3 tbsp olive oil (divided)
  • 4 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt (more to taste)
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped, for garnish)
  • 2 tbsp unsalted butter (melted)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a large baking dish by drizzling 1 tablespoon of olive oil across the bottom.
  3. In a small bowl, whisk together the remaining olive oil, minced garlic, Italian seasoning, paprika, salt, and black pepper. Coat the chicken with this marinade.
  4. Halve or quarter the baby potatoes and add them to the baking dish. Pour the remaining marinade over them and toss well.
  5. Place the chicken on top of the potatoes, then roast in the oven for about 30-35 minutes.
  6. Once cooked, sprinkle grated Parmesan cheese over the chicken and potatoes and broil for 2-3 minutes until golden.
  7. Drizzle melted butter over the dish and garnish with fresh parsley.

Notes

For added flavor, consider including seasonal vegetables or spices. This dish can be prepared ahead of time by marinating the chicken and preparing the potatoes in advance.
