Italian Wedding Soup

A comforting Italian classic featuring turkey meatballs, fresh spinach, and small pasta in a savory broth.

Ingredients

  • 1 lb ground turkey
  • 1/3 cup breadcrumbs
  • 1 beaten egg
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 onion, chopped
  • Red pepper flakes, to taste
  • 6 cups chicken broth
  • 2 cups small pasta (acini di pepe, orzo, or ditalini)
  • 2 cups fresh spinach
  • Fresh thyme and parsley, to taste

Instructions

  1. Combine the ground turkey, breadcrumbs, beaten egg, minced garlic, salt, and pepper in a mixing bowl to make the meatballs.
  2. Heat olive oil in a large pot over medium heat and brown the meatballs for 5-7 minutes.
  3. Remove the meatballs and set aside. In the same pot, sauté chopped onions, minced garlic, and red pepper flakes until translucent.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the pasta to the broth and cook according to package instructions.
  6. Return the meatballs to the pot and simmer for 5 minutes.
  7. Stir in the fresh spinach just before serving, allowing it to wilt.

Notes

Serve with freshly grated Parmesan cheese and a drizzle of olive oil for added flavor. Pair with crusty bread or a simple salad.
