Italian Peach Summer Cookies (Pesche Dolci)

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup peach preserves or filling
  • Peach syrup (for drizzling)
  • Granulated sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix the flour, baking powder, and salt in a medium mixing bowl.
  3. Cream the butter and sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  5. Combine the dry ingredients with the wet ingredients, alternating with the milk.
  6. Fill cookie dough balls with peach preserves by scooping a tablespoon of dough, flattening it, adding preserves, and rolling it into a ball.
  7. Roll each ball in sugar to coat.
  8. Bake for 15-18 minutes, or until the bottoms are lightly golden.
  9. Drizzle with peach syrup before serving.
