Easy Strawberry Cheesecake Sweet Rolls

  • ¼ cup granulated sugar

  • ¾ cup warm milk (110°F/43°C)
  • 3 tablespoons unsalted butter, melted

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (or plant-based milk)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Prepare the Dough: In a large mixing bowl, whisk together the flour, sugar, and salt. In a small bowl, combine the warm milk and yeast, letting it sit for about 5 minutes until frothy.
  2. Mix: Once frothy, add the yeast mixture, melted butter, and egg to the dry ingredients. Stir until combined, and then knead the dough on a floured surface for about 5-7 minutes until soft and elastic.
  3. First Rise: Place the dough in a greased bowl, cover it with a damp kitchen towel, and let it rise in a warm space for about 1 hour.
  4. Make the Filling: In a mixing bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, and diced strawberries until smooth.
  5. Roll it Out: After the dough has risen, punch it down gently and roll it out on a floured surface into a large rectangle (about 12×18 inches).
  6. Spread the Filling: Evenly spread the cream cheese mixture over the surface of the rolled-out dough.
  7. Roll it Up: Starting from the long edge, carefully roll the dough into a tight log and slice it into 12 even pieces.
  8. Second Rise: Cover the rolls with a kitchen towel again and let them rise for another 30 minutes.
  9. Preheat Oven: Preheat your oven to 350°F (175°C).
  10. Bake: Bake the rolls in the preheated oven for about 25-30 minutes or until golden brown.
  11. Prepare the Glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  12. Drizzle: Once your rolls have cooled for about 10 minutes, drizzle the glaze over the top.

Notes

For a gluten-free option, swap the all-purpose flour with a gluten-free flour blend. These sweet rolls can be frozen before glazing.
