  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 zucchini, diced
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 can (15 ounces) cannellini or kidney beans, rinsed
  • 1 cup small pasta (like ditalini or orzo)
  • 2 cups fresh spinach or kale
  • Fresh basil and parsley, chopped
  • Salt and pepper to taste
  • Squeeze of lemon
  • Grated Parmesan for serving (optional)

Instructions

  1. Prep your veggies: Dice your carrots, celery, and zucchini into bite-sized pieces. Mince garlic and chop your herbs for later.
  2. Sauté the base: In a large Dutch oven, heat olive oil over medium heat. Toss in onions, celery, and carrots. Sauté for about 5-7 minutes.
  3. Add the garlic: Once veggies are tender, add minced garlic and sauté for another minute.
  4. Incorporate tomatoes: Pour in canned diced tomatoes and stir together, allowing to simmer for 5-10 minutes.
  5. Broth and beans: Add broth and rinsed beans, bring to a gentle boil, then reduce to a simmer for 15-20 minutes.
  6. Pasta time: Add pasta and cook according to package instructions, about 8-10 minutes.
  7. Finishing touches: In the last few minutes, add spinach or kale and chopped herbs. Season with salt, pepper, and a squeeze of lemon.
  8. Serve with love: Ladle soup into bowls and drizzle with olive oil, sprinkle with Parmesan if desired.
