Easy Cinnamon Sugar Blondies

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking pan by greasing or lining with parchment paper.
  3. Melt the butter in a microwave-safe bowl until bubbly and slightly cooled.
  4. Mix the brown and granulated sugar into the melted butter until smooth.
  5. Add the eggs and vanilla, whisking until fully combined.
  6. Combine the flour, baking powder, cinnamon, and salt in a separate bowl.
  7. Blend the dry ingredients into the wet mixture, folding gently.
  8. Spread the batter in the prepared pan.
  9. Make the cinnamon sugar topping by mixing the granulated sugar and cinnamon, and sprinkle over the batter.
  10. Bake for 20-25 minutes, checking for a toothpick to come out with a few moist crumbs.
  11. Cool on a wire rack for at least 10 minutes before cutting into squares.
