Italian Wedding Soup

A heartwarming blend of turkey meatballs, vibrant spinach, and small pasta in a rich broth, perfect for cozy gatherings.

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta (acini di pepe, orzo, or ditalini)
  • 4 cups fresh spinach

Instructions

  1. Combine the ground turkey, breadcrumbs, Parmesan cheese, garlic, parsley, salt, and pepper in a large mixing bowl. Shape into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Add meatballs and brown on all sides, about 5-7 minutes.
  3. Remove the meatballs and set aside. In the same pot, add more olive oil and sauté the onions, carrots, and celery until softened, about 5 minutes.
  4. Add the broth to the pot and bring to a gentle simmer, scraping any bits off the bottom. Return the meatballs and add the pasta.
  5. Simmer for about 10 minutes until pasta is al dente. Add spinach and cook for 2 more minutes, adjusting seasoning as desired.

Notes

This soup can be made vegetarian by substituting turkey meatballs with chickpea or lentil meatballs and using vegetable broth.
