Easy Fresh Strawberry Mousse

A light and fluffy strawberry mousse bursting with fresh flavors, perfect for any occasion.

  • 2 cups fresh strawberries, hulled
  • 1/4 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream, cold

Instructions

  1. Prep the strawberries by washing them thoroughly, hulling them, and slicing in half. Sprinkle with 2 tablespoons of powdered sugar and let sit for 10 minutes.
  2. Blend the strawberries until smooth using a blender or food processor.
  3. Strain the puree through a fine-mesh sieve if a super smooth mousse is desired (optional).
  4. Combine the strawberry puree, remaining powdered sugar, lemon juice, and vanilla extract in a separate bowl.
  5. Whip the cold heavy cream in a large mixing bowl until soft peaks form.
  6. Fold the whipped cream into the strawberry mixture until well combined.
  7. Chill in the fridge for at least 2-4 hours until set before serving.
