Butternut Squash Soup

A comforting and velvety butternut squash soup, perfect for chilly days, that brings warmth and nostalgia with every spoonful.

  • 1 Butternut Squash, peeled and diced
  • 1 Onion, diced
  • 4 cups Broth (Vegetable or Chicken)
  • 1 cup Cream (or Coconut Milk for a dairy-free option)
  • 1 tbsp Sage, chopped

Instructions

  1. Prep the butternut squash by peeling and dicing it. Cut off the ends first for stability.
  2. Sauté the onions in a large pot with olive oil over medium heat until translucent, about 5-7 minutes.
  3. Add the diced butternut squash into the pot with the onions and stir to coat.
  4. Pour in enough broth to cover the squash, bring to a gentle boil, then reduce to a simmer for 20-25 minutes.
  5. Blend the soup until silky smooth using an immersion blender or by transferring to a blender in batches.
  6. Finish the soup by stirring in cream and fresh sage, and adjusting seasoning with salt and pepper.
