Classic Chicken Noodle Soup

A comforting chicken noodle soup recipe that warms the heart and brings family together.

  • 4 bone-in, skin-on chicken thighs
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Prep your chicken: Rinse chicken pieces under cold water, pat dry, and season with salt and pepper.
  2. Sauté the aromatics: In a pot, heat olive oil and cook carrots and celery for 5 minutes, adding garlic in the last minute.
  3. Add the broth: Pour in chicken broth, add chicken, bring to a boil, then simmer for 30-40 minutes until chicken is tender.
  4. Shred the chicken: Remove chicken from pot, let cool, shred, and return to pot.
  5. Noodle time: Add egg noodles to the pot and cook for 8-10 minutes until tender.
  6. Final touches: Taste and adjust seasoning with salt, pepper, and herbs. Add lemon juice if desired.
  7. Serve immediately: Ladle soup into bowls and garnish with parsley.
