Peach Upside Down Cake

A delightful Peach Upside Down Cake that combines fresh peaches with a moist and fluffy cake for a nostalgic dessert experience.

  • 4 ripe peaches, sliced
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan, melt the unsalted butter over low heat and sprinkle the brown sugar evenly over the butter.
  3. Layer the sliced peaches on top of the brown sugar mixture.
  4. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Beat the granulated sugar and half of the melted butter until creamy.
  6. Add the eggs, one at a time, beating well after each addition, then stir in the vanilla extract.
  7. Gradually add the dry ingredients to the wet mixture alternately with milk.
  8. Carefully pour the batter over the arranged peaches.
  9. Place the pan in the preheated oven and bake for about 45-50 minutes.
  10. Allow the cake to cool in the pan for about 10-15 minutes before inverting it onto a serving plate.

Notes

For serving, dust with powdered sugar or top with whipped cream and a scoop of vanilla ice cream. Store leftovers covered at room temperature or in the refrigerator for up to a week.
