Peaches and Cream Crumble Bars

Delicious Peaches and Cream Crumble Bars perfect for summer gatherings, blending juicy peaches with a creamy layer and a buttery crumble topping.

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches/2.5 pounds)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing with butter or lining with parchment paper.
  3. In a mixing bowl, combine flour, sugar, and salt.
  4. Add the cold butter and work it into the mixture until coarse crumbs form.
  5. Reserve 1 1/2 cups for topping and press the rest into the bottom of the prepared baking dish.
  6. Bake the crust for about 15 minutes, until lightly golden.
  7. In a mixing bowl, toss peaches with sugar, flour, cinnamon, and salt.
  8. Drizzle heavy cream and vanilla over the peaches and stir to combine.
  9. Spread the peach filling over the baked crust, then sprinkle the reserved crumble over the top.
  10. Bake for an additional 30-35 minutes until golden brown and bubbly.
  11. Cool in the pan for 30 minutes before slicing.

Serve warm or at room temperature, optionally with extra cream or ice cream.
