Nectarine Spice Butter

A fruity and spiced spread perfect for toasts, pancakes, or a cheese platter, capturing the essence of summer.

  • 9 cups ripe nectarines, pitted and chopped
  • 4 cups sugar
  • 1/4 cup lemon juice
  • 1 tablespoon butter
  • 1 tablespoon cinnamon

Instructions

  1. Prep the nectarines: Wash the nectarines thoroughly, slice them in half, remove the pits, and chop into small pieces.
  2. Combine ingredients in a pot: In a large heavy-bottomed pot, mix the nectarines, sugar, lemon juice, butter, and cinnamon.
  3. Cook the mixture: Place the pot over medium heat, stirring frequently for about 30-40 minutes until it thickens.
  4. Check for consistency: Place a spoonful on a cold plate; if it holds shape, it’s ready.
  5. Jar the butter: Transfer the mixture into sterilized jars, leaving airspace at the top, and seal tightly.
