  • 2 cups Spinach (fresh or frozen)
  • 2 cups Tomatoes (canned or fresh, diced)
  • 1 tablespoon Herbs (fresh thyme, rosemary, or basil)
  • 4 cloves Garlic (fresh, minced)
  • 1 Onion (yellow or white, chopped)
  • 4 cups Vegetable Broth
  • 2 tablespoons Olive Oil (extra virgin)

Instructions

  1. Prep the ingredients by rinsing the white beans in cold water, setting them aside.
  2. Sauté the onion in olive oil over medium heat for about 5 minutes. Add garlic and stir for 1 minute.
  3. Add the diced tomatoes, season with salt and pepper, and let simmer.
  4. Incorporate the vegetable broth and bring to a gentle simmer.
  5. Mix in the white beans, mashing some for thickness.
  6. Herb it up by adding the herbs and simmer for another 10-15 minutes.
  7. Add the spinach and allow it to wilt before serving.
