Peach Cobbler with Blackberries

A delightful summer dessert featuring juicy peaches and tart blackberries, topped with a golden cobbler crust.

  • 4 cups sliced peaches
  • 2 cups blackberries
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced peaches and blackberries in a mixing bowl. Sprinkle 1/2 cup of sugar over the fruit and let sit for about 10 minutes.
  3. Whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt in another bowl. Create a well in the center and add the melted butter, milk, and vanilla extract. Mix until just combined.
  4. Grease a 9×13 baking dish and pour the batter evenly into the bottom. Spoon the peach and blackberry mixture over the batter.
  5. Bake for 40-45 minutes until the top is golden brown.
  6. Cool for about 10-15 minutes before serving.

Notes

Serve warm with vanilla ice cream for a delightful treat. You can also add a sprinkle of fresh mint on top for garnish.
