Hearty Beef Barley Soup

  • 1 lb Beef (chuck or stew meat)
  • 1 cup Barley (pearl or hulled)
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Onion, diced
  • 4 cloves Garlic, minced
  • 6 cups Beef broth
  • 2 Bay leaves
  • 1 tsp Thyme
  • Salt and pepper to taste
  • 1 tbsp Olive oil

Instructions

  1. Prepare your ingredients by chopping your beef into bite-sized pieces and dicing the onions, carrots, and celery. Mince the garlic.
  2. Brown the beef in a large pot with olive oil over medium-high heat for about 5-7 minutes until it develops a crust.
  3. Sauté the vegetables in the same pot for about 5 minutes, then stir in the garlic and cook for an additional 30 seconds.
  4. Add the beef back to the pot, pour in the beef broth, then add the barley, bay leaves, and thyme. Season with salt and pepper.
  5. Simmer on low heat for about 90 minutes, stirring occasionally.
  6. Final touches: Taste and adjust seasoning before serving. Remove the bay leaves.

Serve with a sprinkle of parsley and a squeeze of lemon for added flavor.
