Hearty Beef Vegetable Soup

Ingredients

  • 1 lb boneless chuck roast or stew meat
  • 2 medium Russet or Yukon gold potatoes
  • 2 large carrots
  • 1 cup frozen peas
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 medium onion
  • 2 cloves garlic
  • Salt and pepper to taste
  • Fresh herbs (bay leaf, thyme, Italian seasoning)
  • Olive oil for cooking

Instructions

  1. Prep your ingredients: Wash, peel, and chop all vegetables.
  2. Brown the beef in a large pot over medium-high heat with olive oil.
  3. Sauté the vegetables starting with onions, then adding garlic, carrots, and potatoes.
  4. Deglaze with broth and scrape the pot to release browned bits.
  5. Add the canned tomatoes including juices.
  6. Season generously with salt, pepper, and herbs.
  7. Simmer for 90 minutes to 2 hours until beef is tender.
  8. Add the peas 10 minutes before serving.

Notes

Serve with a sprinkle of fresh parsley or chives and a crusty loaf of bread.
