  • Pepper, to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil, add chopped onion, and sauté until translucent, about 5 minutes.
  2. Brown the beef: Push the onions aside and add ground beef; cook until browned, about 6 to 8 minutes, seasoning with salt and pepper.
  3. Add garlic and cabbage: Stir in minced garlic and chopped cabbage; sauté for an additional 3-4 minutes until cabbage starts to wilt.
  4. Incorporate tomatoes: Pour in the can of diced tomatoes with their juice and stir.
  5. Add the rice and broth: Mix in rinsed rice and beef broth; bring to a boil.
  6. Simmer: Reduce heat, cover, and let simmer for 25-30 minutes.
  7. Season to taste: Adjust seasoning as necessary and add fresh parsley if desired.
  8. Serve and enjoy: Ladle soup into bowls and serve hot, optionally topping with grated cheese or fresh herbs.
