Cabbage Roll Soup

A comforting soup that captures the flavors of classic stuffed cabbage rolls without the fuss of rolling individual leaves.

Ingredients

  • 1 lb Ground Beef
  • 1 head Cabbage, chopped
  • 1 cup Long-Grain White Rice
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth
  • 2 tsp Fresh Thyme
  • 1 tsp Paprika
  • Salt and Pepper, to taste

Instructions

  1. Brown the meat in a large pot over medium heat for about 5-7 minutes.
  2. Sauté the onion and garlic for another 3-5 minutes until fragrant.
  3. Incorporate the chopped cabbage and stir for 3-4 minutes until softened.
  4. Add the rice and canned tomatoes, stirring to combine.
  5. Pour in the beef broth and bring to a gentle boil.
  6. Simmer for 25-30 minutes on low heat, covered.
  7. Adjust seasoning to taste before serving.

Notes

This soup can be made in advance and reheats beautifully. Add more broth if it thickens too much.
