Chicken Fajita Soup

A delightful fusion of classic fajita flavors in a cozy, comforting soup.

Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 bell peppers (red, yellow, or green)
  • 2 tablespoons fajita seasoning
  • 1 can black beans or pinto beans
  • 4 cups low-sodium chicken broth
  • 2 tablespoons fresh lime juice
  • Optional toppings: avocado, fresh cilantro, shredded cheese, tortilla strips

Instructions

  1. Prep your ingredients by chopping chicken and slicing peppers.
  2. Cook the chicken in olive oil over medium-high heat for 5–7 minutes until browned.
  3. Sauté the sliced peppers with the chicken for another 5 minutes.
  4. Season the mixture with fajita seasoning and cook for an additional minute.
  5. Add chicken broth and beans; simmer for 15–20 minutes.
  6. Finish with lime juice just before serving.

Notes

Store in airtight containers in the fridge for up to 4 days. Freezing is also an option for up to 3 months.
