Loaded Baked Potato Soup

A creamy and dreamy Loaded Baked Potato Soup, infused with flavors of crispy bacon, cheddar cheese, and topped with green onions—a perfect cozy dish for chilly evenings.

  • 4 medium Potatoes (Russet or Yukon Gold), peeled and cubed
  • 6 slices Bacon, chopped
  • 1 cup Cheddar Cheese, shredded
  • 1 cup Sour Cream
  • 1/2 cup Green Onions, chopped
  • 4 cups Chicken or Vegetable Stock
  • Salt and Pepper to taste

Instructions

  1. Prepare Your Ingredients: Wash and peel the potatoes, and chop them into small cubes.
  2. Cook the Bacon: In a large stockpot over medium heat, add the chopped bacon and cook until crispy.
  3. Sauté the Onions: In the leftover bacon fat, add chopped green onions and sauté for 2-3 minutes.
  4. Add Potatoes and Stock: Add cubed potatoes and stock to the pot, covering the potatoes completely.
  5. Simmer Away: Reduce heat to low, cover, and simmer for around 20 minutes until potatoes are tender.
  6. Blend it Up: Use an immersion blender to puree the soup until reaching desired consistency.
  7. Stir in Cheddar and Sour Cream: Return pot to low heat, and stir in shredded cheddar cheese and sour cream.
  8. Finish with Bacon: Add most of the cooked bacon back into the pot and heat through for another 2-3 minutes.

Notes

Feel free to adjust seasoning; the cheese and bacon add plenty of flavor.
