One-Pot Creamy Spicy Cajun Sausage Pasta

A delicious one-pot pasta dish featuring creamy sauce and bold Cajun spices, perfect for busy weeknights or entertaining.

  • 1 lb smoked sausage
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion
  • 1 bell pepper
  • 3 cloves garlic
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. Sauté the sausage in a large pot over medium heat with olive oil until browned.
  2. Add chopped onion and diced bell pepper; sauté until softened.
  3. Incorporate minced garlic and cook until fragrant.
  4. Mix in diced tomatoes, chicken broth, penne pasta, Cajun seasoning, paprika, and salt and pepper.
  5. Bring to a gentle boil, then reduce heat to simmer and cover, cooking for about 15 minutes until pasta is al dente.
  6. Add heavy cream and stir for an additional 2-3 minutes.
  7. Remove from heat and stir in half the Parmesan cheese; garnish with remainder before serving.

Notes

Feel free to substitute sausage with shrimp or chicken, or add extra veggies for a vegetarian option. This dish is also great with gluten-free pasta.
